REGULATIONS
Antimix™ CP may be labelled as cultured sugar and ε-Polylysine, approved as GRAS antimicrobial by FDA, USA. The regulations governing the use of Antimix™ CP vary considerably in the countries in which it is currently approved. SOY SAUCE
Spoilage microorganisms in soy sauce, such as bacteria (e.g. Lactobacillus spp.) and fungi (e.g. Mucor spp. and Saccharomyces spp.) are naturally abundant. The addition of 40 mg/kg Antimix® CP can significantly inhibit Total Bacterial Population in long-stored soy sauce.
