DESCRIPTION
Fixolor® PK is pre-converted nitrite from naturally available nitrates in Swiss chard. Fixolor® PK is used to enhance red-pinkish color and flavor development during meat curing. It eliminates the incubation time and elevated temperature requirements needed to perform curing procedures by the use of starter cultures for nitrate conversion. It can also supplement antimicrobial functionality by inhibiting gram+ bacteria such as Listeria and C. botulinum in processed meat products.

REGULATIONS
Fixolor® PK is labelled as vegetal nitrite or cultured chard, which is approved as GRAS by FDA, USA. The regulations governing the use of Fixolor® PK vary considerably in the countries in which it is currently approved. 

It is recommended to use it after ensuring compliance with your local regulations.
Swiss chard is well known for containing high levels of nitrate (2,992 mg/kg) along with components such as phenolic acids and flavonoids, which can be converted to nitrite using nitrate reducing starter cultures such as S. Xylosus to manufacture Fixolor® PK which is used to replace synthetic nitrites in meat industry.
 
COOKED PORK MEAT
Fixolor® PK (0.7% w/w) in cooked (cured) pork meat displays reddish pink color of meat after curing with a Total Plate Count value lower than 2.0 LOG CFU/g.
