JUICE DRINKS
Up to 1 g/L concentrations of Chitoly® OM is used in Orange juice as a clarification agent to minimize turbidity and preserve ascorbic acid and carotenoids associated with the positive charge of chitosan.
FRESH-CUT LOTUS ROOT
1% Chitoly® OM in combination with modified atmosphere packagng (MAP) in fresh-cut lotus roots resulted in higher reduction of polyphenol oxidase (PPO) activity as compared to samples with just MAP and control samples.
